Flower Honey: Buckwheat Dominance
Buckwheat or "black wheat" is not a cereal as we
might think so but a flowering plant related to the
Polygonaceae (sorrel, rhubarb, etc.) very popular with bees.
Its particularly long flowering from mid-July to mid-
September gives bees time to forage on this plant.
Buckwheat gives the honey a full-bodied, earthy smell and a strong, distinctive taste that lingers in the mouth.
Highly appreciated from a culinary point of view, it is eaten with a piece of fresh goat cheese...
When bottling, they do not heat any honey to preserve all its natural properties. They use a mechanical process that makes their honey creamy and releases all its olfactory and taste aromas.
